One of my home country's traditional foods is borts, dried meat. Because of long and harsh winter, we often eat a variety of meat, beef, mutton, horse meat, camel meat, and goat. On top of that, our ancestors had nomadic life, and the families in countryside have still lived in old lifestyle. Nomadic people always change locations, 3 or 4 per year. (I suppose it, I do not know much because I am a city boy. I am really embarrassed of ignorance of our culture and custom). So everything must be easy to carry in this lifestyle - even food. Almost all furnitures are collapsible. Let's write about how to make this wonderful food.
Fresh meat is cut into long strips, 1-2 centimetre thick, 3-4 centimetre wide. The strips are hung on under the roof of the yurt, where air is free to circulate. Nowadays, city dweller who live in apartment hung on borts on line in the balcony. After 1 or 2 months, the meat is dry. The volume has shrunk so much.
